3 Ingredient Banana Cookie Recipe
“It’s hard to be sad, when you’re eating a [healthy] cookie.”
This healthy 3 Ingredient Banana Cookie recipe is super tasty, naturally sweetened and only take minutes to whip up! Moreover, because this recipe is so easy to create, you can definitely get the kids involved. Teach them the importance of real-food ingredients, cooking skills and eating for health! Not only do these cookies make the best after-school snack, but they are great for dessert too! On top of this, this delectable recipe also contains a balance of macronutrients–protein, healthy fat, fiber and healthy carbs–which we all need for optimal health, as well as maintaining blood sugar balance. Finally, these beauties are vegan, paleo, gluten-free and free of refined sugar.

Nutrition FYI

Cinnamon helps to lower blood sugar and improve insulin sensitivity according to the USDA. Take one teaspoon in the morning and then one teaspoon for lunch or dinner. (Bauman, 2015)

Almonds are a wonderful source of protein, potassium, magnesium, calcium, iron, zinc and vitamin E. They are an excellent source of antioxidant flavonoids and are considered an anti-cancer food. They are helpful in lowering cholesterol and heart disease. (Murray, 2005)

3 Ingredient Banana Cookie Recipe

Ingredients: (makes 8-10 cookies)
– 3 ripe bananas + 1 banana for decoration (4 total)
– 1.5 cups of almond flour
– 1 tbs. almond butter
– 1 tsp. cinnamon or nutmeg (optional)

Directions: 
  1. Heat oven to 350 F
  2. Line a baking sheet with parchment paper
  3. Mash 3 ripe bananas in a bowl
  4. Add flour and almond butter, mix together with a spoon or fork until well combined
  5. Next, spoon and divide your banana mixture onto your cookie sheet into about 8-10 cookies
  6. Press down on the cookies with your hand to flatten
  7. Add a slice of banana to the center of each of the cookies
  8. Bake for 18-20 minutes until golden brown

*Tip: If they are not golden brown by 18 minutes, but cooked in the center, place under the broiler for 1-2 minutes. Enjoy with almond butter on the side!
